What We Ate This Week- Meal Planning Inspiration

It’s been hard to come up with ideas for posts lately. I’m in what feels like the 7 week slump of Stay Home, Stay Safe and it seems like most blogs are writing about the same things.

Truthfully I just haven’t been inspired.

But then a small thought started to sprout in my head… Most of us are in the kitchen a lot more often than usual, and it’s been difficult to get all the ingredients we might like to have on hand for such a time of constant cooking. So I thought I would walk you through our week of eating yummy meals from Monday- Friday. I’ll share pictures of what we ate, give recipes for anything that needs one and show you how we beef it up to help make it go a little further.

So let’s get going!

Monday
To kick the week off we started with something fairly easy. I had spent most of the day in the kitchen prepping food, making granola and making cookie dough to freeze for later. I used an instant pot mac and cheese recipe (This is how I cook my pasta in the instant pot), paired it with chicken and steamed some broccoli.

Tuesday
Taco Tuesday is damn near a religious occasion in this house. We almost never skip it! This week I did change it up a little by making a cheesy taco rice bowl. I topped mine with homemade refried beans, guac, salsa, sour cream and tabasco. Cooked the rice in the instant pot and then combined all the basic ingredients. I made my sauce from scratch, but I don’t actually have a recipe for that yet, some Velveeta would be perfect in a meal like this, or just shredded cheese. All of the kids liked this meal as it was, and hubby and I loved it with all of the toppings.

Wednesday
Sometimes I like to make a meal and double it so that I can put the extra meal in the freezer for use later. Then when we’re ready to eat it, I can thaw it out and finish cooking it. This was the case for tonight. Back in March I made two Shepard’s Pies and froze one. So I just needed to thaw it out and bake it in the oven until the mashed potatoes brown a little on top and served it. The kids hate this meal, so they had chicken, kraft macaroni and cheese, and carrots tonight.

Thursday
Once a week our oldest (18) picks a meal to prepare. Tonight was also mine and my husband’s 4 year wedding anniversary. So the oldest found a recipe for loaded fries (she even learned how to cut and actually FRY the fries and then loaded them up) and hubby worked the grill to make some steaks. Hubby and I ate together on the porch, while the kids ate dinner in the house. We’re doing what we can to make some kind of a ‘date night’ once in a while even when most places are closed. I also had corn with my fries, but I didn’t get a picture of my plate, this is what my husband’s plate looked like.

Friday
Friday night is always pizza night! I use the same basic pizza dough and the kid’s usually have a cheese and pepperoni and we change up what kind of toppings we put on our pizza. We usually have a salad with the pizza and call it a night.
Pizza Dough Recipe:
Ingredients
2 1/4 C White Flour
1 tsp baking powder
1/2 tsp salt
1 C Milk
1/4 C butter
*Optional- 1 Tbsp Italian seasonings or onion and garlic powder
Directions:
Mix all ingredients until a smooth ball forms. If dough is too wet add small ammounts of flour at a time, if it’s too dry you can add a few drops of oil at a time until it comes together. It does tend to be a little sticky. Press into pizza pan. Top with favorite toppings. Bake 15 minutes at 450 Degrees Fahrenheit.

Saturday
By the time I’m actually putting this post together it was Saturday so I decided to include what we had tonight also! We mad a pot of chili using some roast and bacon fat that I ground up together using my kitchen aid attachment and froze a while ago. This meat is probably the best ground beef I’ve ever had! If you are having a hard time finding ground beef or want to try something new, I highly suggest trying this out! And just kept it simple tonight by adding in two cans of tomato sauce, and a can each of black beans, chili beans, and kidney beans. My family doesn’t appreciate canned tomatoes, so I leave those out. We had some fresh rolls, I made them a few weeks ago and froze the dough, then took out 5 for dinner tonight and baked them up! Took less than a half hour to get this dinner to the table!

 

I hope this helped inspire some simple meals ideas, or at the very least gave you an easy pizza dough recipe to try!
