The Easiest Saint Patty’s Day Cookies EVER!

Want to do something fun, but low effort this Saint Patty’s Day? This is probably one of my favorite cookie recipes ever! It’s simple, it’s quick and yet still tastes great! This recipe can be adapted for any occasion, but I just can’t deny some good minty chocolate around this fun whimsical day!

Easy Cake Cookies

Ingredients:
1 box of cake mix (I used chocolate this time, but any flavor will work)
1 Egg
1/2 Cup Oil
Optional:
Andes Chocolate Mints, or Minty Baking chips if you can find them.
Frosting
Sprinkles

Directions:
Combine cake mix, egg, and oil. The batter will be very thick and sticky. Fold in chocolate mint candies. Scoop onto baking sheet about two inches apart. These are very thick and they will spread out quite a bit as they bake. Put into a preheated oven at 350 Degrees Fahrenheit. Bake for 9-11 minutes. Allow to cool for a few minutes on the cookie sheet, then transfer to a cooling rack. Once cookies are completely cooled you can frost them and decorate them how you like. You could even get some gold edible glitter, but I had the rainbow sprinkles on hand and thought they would work well!

 

We have tried this cookie with a strawberry cake mix for Valentine’s day, and we do a few different combinations around Christmas time. With all the different cake mix flavors and the different mix in combinations you could come up with, the possibilities are almost endless! What will you make?!
