Today’s straight to the point, no-frills recipe idea is definitely a family favorite! Do you like mozzarella? Do you like Chicken? Do you like Pesto? How about pasta? (DUH! Right?!) This is a great recipe for any kind of weather in every single season.
3 large chicken breasts
8 Oz Pesto (this last time I had to substitute two packets of pesto mix and it was fine)
2 tablespoons butter
2 cups shredded mozzarella
12 Oz pasta
Put chicken breasts in the bottom of your slow cooker, top with 2 tablespoons of butter and a jar of pesto. Cook on low for 6 hours or high for 4 hours. When the chicken is cooked through, put it in a mixing bowl and shred with a hand mixer (You CAN mix it right in the slow cooker, but if you are using a bag do NOT mix in the slow cooker… Learn from my silly mistake!) then put the chicken back into the crockpot and top with mozzarella. Continue cooking until the cheese is melted. While waiting for the cheese to melt, cook pasta of your choice separately. After the pasta is cooked you can mix into the chicken pesto, or serve with the chicken on top of the pasta.
Goes great with pretty much any vegetable, and of course, garlic bread!
