Today’s short and sweet post is a family favorite cozy soup meal! Taco Soup in the slow cooker!
Chicken breasts- 1 large is perfect or 2 smaller ones
4 12 cans of your favorite beans- I switch this up every time depending on what I have on hand
2 cups water and 2 bullion cubes (You can substitute two cups of broth or stock depending on preference)
1/4 C Rice (either instant or regular)
Add all ingredients except rice into your slow cooker. Cook on low for 4 hours or until chicken is cooked. Remove chicken and shred, add back to slow cooker. Add 1/4 C rice (this WILL take up a lot of the broth, it’s perfectly acceptable to omit, or even cook separately.) Serve when the rice is tender if using.
Top with cheese, and sour cream. Eat with tortilla chips. You can add in jalapenos, corn, whatever your heart desires! Serve any leftovers the next day in a tortilla!
